Lime Mango Waffles

Lime Mango WafflesWaffles

Seriously, these waffles are unbelievably good. The lime isn’t overpowering and really compliments the mango quite well.

INGREDIENTS

1 3/4 Cups Unbleached Flour

3 Tablespoons Sugar

1 Tablespoon Baking Powder

1/4 Teaspoon Kosher Salt

2 Large Eggs

1 3/4 Cups Milk

1/2 Cup Melted Butter

1 Teaspoon Vanilla Extract

Zest of 2 Limes

2 Cups Diced Mango

In a medium-size bowl combine the flour, sugar, baking powder and kosher salt. Make a well in the center of the flour mixture and set aside. In another medium-size bowl beat the eggs lightly and then stir in the milk, melted butter, vanilla extract and lime zest. Add the egg mixture all at once to the flour mixture. Stir just until moistened. The batter should be a bit lumpy. Add 1 cup of the dice mango and stir just to combine. Add the batter to a preheated, lightly greased waffle baker (according to the manufacturer’s directions). Close the lid and do not open until done. Bake according to the manufacturer’s direction. When done, use a fork to lift the waffle off of the grid. Repeat with the remaining batter. Serve warm topped with the remaining diced mango and syrup. Makes about 12 (4inch) waffles.
