Green Smoothies at Home

My kids love the TropiKale smoothie at Robek’s.  When I watched them make it, now I know why:  it’s one lonely piece of kale and mostly pineapple and sorbet.  I decided to make a healthier version of the TropiKale at home, and I’m happy to report that adding more kale did not deter from its deliciousness.

All you need is a blender and a few ingredients.  I use frozen fruit because it’s easy to keep on hand, keeps for a long time, and eliminates the need  for ice.  Of course, add more or less of any of the ingredients as desired!

Makes about 2 cups

1.5 cups frozen fruit (pineapple or mango work best)

1/4 cup plain or vanilla yogurt (ok to use Greek yogurt)

1.5 cups chopped raw kale

3/4 – 1 cup orange juice

Starting with the frozen fruit on the bottom, place all the ingredients into the blender.  Blend on high speed for about 1-2 minutes until pieces of kale are no longer visible (although smoothie will be green in color).

Tip:  if the ingredients aren’t moving well in the blender, start by giving it a shake to dislodge anything that may be keeping the blades from running smoothly.  If that doesn’t work, add a little more OJ to loosen things up.

    SOUNDS GREAT! I tend to use Almond Milk instead of OJ…and I also found putting the liquid and yogurt in first, made blending easier. But I have a VitaMix so that may be the reason… Toss in some carrots too! ( they’ll never know!)
