Kale Power Salad

My latest find is the Broccoli Slaw & Kale Salad with White Chicken Meat from Trader Joe’s.  Found in the refrigerated section with the other prepared foods (mainly wraps and salads, plus some veggie sushi), it packs a punch.

I know you’re thinking “Raw kale? Ew.”  Well, think again.  On its own raw kale can be bitter, but when it’s dressed up with broccoli slaw, carrots, cabbage, dried cranberries, sunflower seeds and a delicious sweet and spicy dressing, you’ll never notice.  Kale also happens to be REALLY good for you (did you notice it was in my last post too?).  Add the protein of the chicken and it’s a perfect lunch.  The container is also flat and easy to put into your work bag.  Grab a few of them!

At just 510  calories (and that’s if you use the dressing—without it’s only 270–but use it.  It’s delicious!) and only $3.99 how can you go wrong???
