Chris – Those pancakes look AMAZING! I agree that your mom makes the best pancakes ever (especially her blueberry pancakes). The two of you may need to have a Pancake Cook-Off and I’ll be one of the judges!

I know they’re not pancakes, but I gave you an amazing recipe a few years back for pumpkin waffles. Nothing like them–they melt in your mouth. Trader Joe’s sells a pumpkin pancake mix. Not nearly as good as the homemade, but pretty delicious and a big step up from bisquick.

I agree with you about the pancake mixes. There’s nothing like homemade pancakes, and they are so easy to make! I’ve yet to make the egg white version, so I’ll be sure to try this recipe out. These pancakes look perfect.
