My first attempt at corned beef

With St. Patrick’s day quickly approaching I have been starting to feel the Irish spirit. Perhaps the Irish Soda Bread had a little bit to do with it.

While I do have a few crock pot recipes under my beginner chef belt, I have never really attempted a traditional and beloved dish such as corned beef and cabbage. Yes, yes.. I know what you’re thinking… Aren’t you a vegetarian? What do you know about a good corned beef and cabbage? While I am a vegetarian, I didn’t grow up that way and often that smell of corned beef slowing cooking at my Mom’s house makes me rethink my vegetarian lifestyle.

Who knew such a delicious recipe could be so simple!

Ingredients

1 corned beef brisket

salt, pepper, and 1 bay leaf

Handful of carrots, chopped

1 medium onion, chopped

1 cabbage, chopped

___________________

Directions

Add everything to a crock pot

Fill with enough water to cover the corned beef

Cook on low for 8 hours

Katie’s Tip: Make sure to get a good cut of corned beef or it will be mostly grizzle.
