Grilled Portabello sandwich

With temperatures climbing in the 80′s today, its got me thinking about my favorite summer dinners. One of my personal favorites is grilled portabello mushrooms topped with roasted red peppers, lettuce, tomato, and a drizzle of a tasty Italian dressing. All this delicious goodness is then stuffed into a hoagie roll.

It’s such an easy sandwich to make and the portabello’s add a very hearty and meaty taste for all the vegetarians out there. This dish goes great with summer salads like potato or pasta salad as well as some fresh corn on the cobb. Mmmmm!!
