Chicken & Lentils

Using lentils cuts the carbs and ups the fiber in this dish.


2 Shallots (Peel & Chopped)

1 Pound Chicken Breasts (Cut Into 1 Inch Pieces)

1 Tablespoons Olive Oil

1 Cup Cooked Lentils

1 Cup Cooked Rice

1 Cup Chicken Broth

1 Teaspoon Kosher Salt

1/4 Cup Fresh Basil (Chopped)

In large-size skillet heat olive oil over a medium-high heat. Add shallots and chicken. Cook 3 minutes until chicken is browned. Stir occasionally. Add cooked lentils to skillet. Cook 1 minute. Stir often. Add cooked rice and chicken broth and cook 5 minutes. Stir often. Add kosher salt. Remove from heat and transfer to serving bowl. Garnish with basil.

Cook Time: 9 Minutes

Total Time: 29 Minutes
