Jam Thumbprint Cookies

Let the kids get in on the baking action by helping to make the indentations or spooning the fruity jam. 


2/3 Cup Butter (Softened)

1/2 Cup Sugar

2 Egg Yolks

1 Teaspoon Vanilla Extract

1 1/2 Cups Unbleached Flour

1/3 To 1/2 Cup Jam

In large-size bowl beat butter for 30 seconds. Add sugar.  Beat until combined.  Beat in egg yolks and vanilla.  Add flour and beat until well combined.  Cover and chill 1 hour or until dough is easy to handle. 

Preheat oven to 375 degrees. 

Grease cookie sheet. 

Shape dough into 1-inch balls.  Place 1-inch apart on prepared cookie sheet.  Using your thumb, make an indentation in center of each ball. 

Place in oven 10 to 12 minutes until bottoms are light brown.  If cookie centers puff during baking, re-press centers with the rounded side of a measuring teaspoon. 

Remove cookies from oven and let cool on wire rack. Before serving, fill each center with 1/2 teaspoon jam. 

Makes About 30 Cookies

Total Time:  92 Minutes
