One Pan Enchiladas

One Pan Enchiladas

A super easy cheesy dish that everyone will love. 

INGREDIENTS

1 Tablespoon Olive Oil

2 Pounds Ground Beef

1 Teaspoon Kosher Salt

1/2 Teaspoon Freshly Ground Pepper

1 Small Onion (Diced)

3 Garlic Cloves (Minced)

1 Cup Halved Grape Tomatoes

1 Poblano Pepper (Seeded And Diced)

6 Flour Or Corn Tortillas (Cut Into Triangle Pieces)

2 Cups Diced Tomatoes With Green Chiles

2 1/2 Cups Red Enchilada Sauce

1 Cup Shredded Cheddar Or Monterey Jack Cheese

In large-size pan add ground beef, onions, and garlic. Turn heat to medium-high.  Season with kosher salt and pepper.  Sauté 6 to 10 minutes until done, breaking up any large pieces.  When done cooking remove from pan and transfer to plate covered in paper towels to drain. 

Wipe out pan with paper towels.  Add olive oil and turn heat to medium-high.  Add tortilla pieces and cook 4 minutes until golden brown.  Stir often.  Stir in diced tomatoes, enchilada sauce, tomatoes, poblano pepper, and ground beef mixture.  Cook 10 minutes until well combined and heated through. 

Top with shredded cheese.  Cover and let cheese melt. 

Serve immediately.

Total Time:  44 Minutes
