Tabouli Salad

Tabouli Salad

Many of us like to have a salad every day, but get tired of the same salad.  Change things up with this Tabouli Salad.  If you want to serve it as the main dish you can top with falafel, chicken, or fish. 


1/2 Cup Bulgar

1 Cup Boiling Water

1 Teaspoon Kosher Salt

1 1/2 Cup Chopped Fresh Parsley

1 Cup Chopped Tomatoes

1 Small Cucumber (Sliced)

1/2 Cup Chopped Fresh Mint

4 Green Onions (Thinly Sliced)

1/4 Cup Olive Oil

3 Tablespoons Fresh Lemon Juice

In large-size heavy bowl add bulgur.  Pour boiling water over bulgur.  Add with kosher salt.  Stir to combine.  Let sit on counter 10 minutes.  Drain any excess water.  Cover with plastic wrap and place in refrigerator until cool. 

Remove bowl from fridge.  Add parsley, tomatoes, cucumber, mint, green onions, olive oil, and lemon juice.  Combine well.  Cover with plastic wrap and place back in refrigerator 3 hours up to overnight. 

Serve Chilled
