Symbolizing longevity and health, noodles are always left whole. Breaking or cutting a long strand of noodles is considered bad luck. Nourish a long life with a longevity noodles dish. The longer the noodle, the longer the life, as Chinese legend dictates, so be sure to slurp instead of cutting or breaking them.
1 Pound Spaghetti Or Other Long Noodles
1 Inch Fresh Ginger (Peel, Finely Chop)
1 Bunch Green Onions (Thinly Sliced)
1 Tablespoon Canola Oil
2 Garlic Cloves (Minced)
1 Cup Sliced Shitake Mushrooms
1 Teaspoon Kosher Salt
1/2 Teaspoon Freshly Ground Pepper
1 Cup Spinach
3 Tablespoons Soy Sauce
1 Tablespoon Molasses
2 Tablespoons Toasted Sesame Oil
In small-size bowl combine soy sauce, molasses, and sesame oil. Set aside.
Cook spaghetti according to package directions. Place spinach in colander in the sink. When spaghetti is cooked drain over spinach to wilt it.
In large-size skillet add canola oil, ginger, garlic, and green onions. Cook 3 to 5 minutes until garlic has softened. Stir often. Add mushrooms and cook 5 minutes. Stir often. Season with kosher salt and pepper.
Add cooked noodles and spinach to skillet along with soy sauce mixture. Cook 2 minutes, tossing until well combined.
Transfer to serving bowl and serve immediately.
